A taste of sunshine on Christmas Eve

Heritage Resorts executive Chef, Enrico Rodati has cooked up a storm with his turkey roulade stuffed with lychees. The ideal recipe to impress your guests this year…


Turkey roulade stuffed with lychees of the Domaine de Bel Ombre…

…accompanied by mini frozen seasonal vegetables, sweet potato mash with a touch of vanilla, flambeed juice and coffee rum.

Ingredients:

Serves 6 people
• 3.5 kg boneless turkey
• Crushed turkey flesh, herbs, salt, pepper, pitted lychees and nutmeg. Mix to make a stuffing
• 250ml red wine
• Mini Carrot 250g
• Mini zucchini 250g
• Asparagus tips 250 g
• Sweet Potato 500 g
• Vanilla pod 20 g
• Cooking juice 500 ml
• Coffee Rum Chamarel 100 g
• Butter 100 g
• Beetroot confit with balsamic

Preparation:

• Roll the stuffing in plastic wrap and then in foil
• Preheat the oven to 180 degrees and bake your preparation for 30 minutes
• Peel the sweet potatoes, cooked in milk and vanilla, and once cooked, do a smash and season
• Peel the beetroot, cut into cubes, put in balsamic and honey and a little water
• Remove the roulades from foil and let brown in the cooking juice, then flambé with rum, and add the red wine
• Let reduce, beat with butter and place them on flat plates

Chef Enrico Rodadi, a globe-trotter around the world of flavours

Executive Chef Enrico Rodati cooking tells a story as he combines Mediterranean inspiration with Italian tradition and oriental refinement. His passion led him from Rome to Seoul, from Singapore to Japan and finally to Mauritius where he discovered other cultures and a unique harmony.

On the shores of the China Sea in Singapore, he learned the delights of Asia. Thai, Chinese and Indian cuisine revealing subtle compositions. After that he worked in Osaka, in the Land of the Rising Sun, where each dish is designed as a work of art.

This globe-trotter of the cooking ranges has now unpacked his bags at Heritage Le Telfair, a luxury hotel in Mauritius, where his inventive cuisine has found its equilibrium. In 2009, he was awarded the prestigious emblem of the “Toques Blanches” and in 2012; he was appointed Executive Chef of Heritage Resorts.
