Ingredients
- 4 zucchinis
- 5 carrots
- 1 red capsicum
- 1 green capsicum
- 1 onion
- Crushed tomatoes
- Some dried tomatoes
- Olive oil
- Salt and pepper
- Ras el hanout
- Cinnamon
Preparation
- Peel, chop the onion and fry it in a pan with a little olive oil.
- Peel the zucchinis, carrots, cut them into slices and cut the capsicums into strips.
- Add the vegetables to the pan, pour the crushed tomatoes, cut the dried tomatoes into small pieces; add salt and pepper.
- Add a full teaspoon of Ras el hanout, and half a teaspoon of cinnamon.
- Cover and simmer over low heat for 45 minutes, until vegetables become tender.
- Serve with semolina.
