Flavours of the Maghreb at the Chef’s table – Vegetarian Tagine

This month, Heritage Resorts’ Chef suggests you a culinary trip to North Africa with a vegetarian tagine. Get your kitchenware ready and make it tasty!

Ingredients

  • 4 zucchinis
  • 5 carrots
  • 1 red capsicum
  • 1 green capsicum
  • 1 onion
  • Crushed tomatoes
  • Some dried tomatoes
  • Olive oil
  • Salt and pepper
  • Ras el hanout
  • Cinnamon

Preparation

  • Peel, chop the onion and fry it in a pan with a little olive oil.
  • Peel the zucchinis, carrots, cut them into slices and cut the capsicums into strips.
  • Add the vegetables to the pan, pour the crushed tomatoes, cut the dried tomatoes into small pieces; add salt and pepper.
  • Add a full teaspoon of Ras el hanout, and half a teaspoon of cinnamon.
  • Cover and simmer over low heat for 45 minutes, until vegetables become tender.
  • Serve with semolina.
